Bobotie
Ingredients
1kg minced beef
2 medium sized onions, peeled and thinly sliced
30ml sunflower oil
15ml medium strength curry powder (Rajah or Packo)
15ml sugar
30ml white spirit vinegar or lemon juice
2 slices white bread
250ml milk
2 large eggs
75 gr raisins
45ml fruit chutney
2 bay leaves
handful of sliced almonds blanched (optional)
salt and peppper to taste
Method
Preheat oven to 180c
Fry the onions gently until soft and golden
Add the curry power and tumeric and fry for a further 2 mins
Add the vinegar or lemon juice, sugar, salt and pepper.
In the meanwhile, soak the bread in milk, then squeeze dry, strain the milk and set aside.
Crumble the minced raw meat into the pan and brown for 5 minutes.
Lightly mix the meat, bread, onion mixture with 1 egg, raisins and chutney.
Pack into a buttered casserole and add the bay leaves, cover and bake for 1 1/2 hours.
Remove from the oven and sprinkle the almonds
Beat the remaining egg with the milk and pour over the meat
Return to the oven bake for 30minutes.
This is great served with yellow rice, sliced bananas, desicated coconut and Mrs Balls.
